I've been trying to make pizzas and I tried a calzone tonight,
Everything is real good except the crusts- not bad but not good enough.
Does anyone have a tried, true and easy recipe for dough ?
I did also try baboli, a Betty Crocker mix & Martha White mix already....

I am enclosing a recipe for focaccia bread which is often used in Italy for pizza crust. It you want to use it for calzone, I would eliminate the basil, oregano, and thyme. My family loves this bread and the next homemade pizza I make, I plan to use it for the crust.
Focaccia Bread- This is delicious and is great as a dipping bread.
Ingredients:
2 ¾ cups all-purpose flour
1 teaspoon of salt
1 teaspoon of white sugar
1 tablespoon of yeast
1 tsp of garlic powder
1 tsp of dried oregano
1 tsp of dried thyme
½ tsp of dried basil
1 pinch ground black pepper (I used ½ tsp)
1 Tbs of canola oil--- I personally use olive oil.
1 cup of warm water
2 tablespoons of olive oil
1 tablespoon of grated Parmesan cheese ( I personally use about ¼ cup)
1 cup of mozzarella ( I like the mixed Italian grated cheese)
1. Add all the dry ingredients into your mixing bowl except cheeses. (I use my mixer)
2. Add very warm water with the olive oil and canola oil to the dry mixture.
3. Knead until the dough is smooth and elastic. This would be an easy dough to do by hand but I just use the mixer.
4. Preheat oven to 450 degrees. Yes, I do mean 450 degrees.
5. I knead the dough on a board by hand for about 1 minute.
6. Grease a bowl with olive oil. (I just wash out my mixing bowl with really hot water so the bowl is warm.) Add enough olive oil so that you can turn your ball of dough and get the whole ball oiled.
7. Cover with a cloth and allow to rise for 20 minutes.
8. Punch down and place your dough on a well oiled baking sheet. I use olive oil for this as well. Pat your dough into a ½ inch thick rectangle. Brush the top with olive oil and with your fingers make little indentions throughout the rectangle. Sprinkle with Parmesan cheese and Mozzarella cheese.
9. Bake until golden brown. The recipe says 15 minutes but mine usually is closer to 20/25 minutes. Serve warm. Leftover bread can be heated by wrapping in aluminum foil and heating in a 350 degree oven for 10 to 15 minutes.

Thank you for the recipe maysvillebulldog- I will try it out .
I'd love to have it delivered -except we're too far out for that. And by dinner time sometimes I'd rather just cook than run out for anything, although I do prefer someone else to make dinner, as my Husband says "it's always better when someone else cooks" but he means ME when he says that ....men

1 tablespoon of yeast I used active dry - is there anything wrong with that ? Is there any other kind of yeast to use ?
1 Tbs of canola oil--- I personally use olive oil. probably should have listened - I used veg.oil
2 tablespoons of olive oil again, used the veg. oil, will use the olive oil next time
I was afraid of over mixing it - and kneading it but it came out better than any other crust so far ( I used it for pizza )
Gonna try again next week- pizza or maybe with a calzone.
