Low-carb diabetic safe cheesecake

Low-carb diabetic safe cheesecake
V1.0-072506
Base:
1½ cup finely ground nuts (recommend almounds, pecans are *strong* tasting)
1¼ cup splendra
¼ cup melted margarine
Using your hands, mix together well, and then pack firmly into the base of a 10" cheesecake pan, covering the bottom evenly.
Filling:
24oz (3, 8oz packets) of cream cheese (check the carb count! brands and even different fat amounts will be radically different. 1/3 fat Philly Cream Cheese seems to be the lowest)
1¼ cup Splenda (not equal, won't stand up to heat)
4 large eggs
1 tsp vanilla
1 cup (1 pint) of thick whipping cream
Beat together Splenda, and cream chees in a large bowl until creamy.
Add in 1 egg at a time while continuing to beat
Mix in remaining ingredients

Pour or spoon in the filling into the 10" pan
Bake for 1 hour at 350f
Turn off heat, and leave in oven with door closed 1 more hour
Run a knife around the dge of the cheesecake and leave to cool.
Refrigerate for a further hour until completely set.
Toppings:
Land O'Lakes Splenda based whipped topping (0 carbs, and delicious!)
Berries
Or roughly chopped nuts
For a wild change put in 1 box of suger free jello powder of your choice, at the end, marked with a *. Lime jello will make you a Keylime Cheesecake (quite good!) Strawberry will make a 'Scootercrunch' tasting cheesecake. Try two flavors too (Lemon/Lime Cheesecake for example?)

Notes:
This is confirmed to be diabetic safe. My system is sensitive, because I'm not on meds at this time, but it didn't make a raise even after 30 minutes. Always test however to be safe.
I just made this, so this may need a bit of adjustment. I plan on putting another 1/4, to 1/2 cup of splendra into the filling to boost the sweetness. This recipe makes a mild sweet cheesecake.
Also you can buy ground nuts at Yoders in Flemingsburg. Maysville's Yoders doesn't have nuts at present.
