View Full Version : Pineapple Upside-Down Cake

2 tbs Butter or margarine
1\3 cup Packed Brown Sugar
2 tbs pineapple juice
1 8 oz can pineapple slices (halved)
5 maraschino cherries (halved)
1 1\3 cup all purpose flour
2\3 cup granulated sugar
2 tsp baking powder
2\3 cup milk
1\4 cup butter or margarine (softened)
1 egg
1 tsp vanilla


1.) melt 2 tbs butter in a 9 in round baking pan. Stir pinapple juice and brown sugar. Place pineapples and cherries.

2.) In medium bowl stir together flour, granulated sugar, and baking powder. Add milk, butter, egg. and vanilla. Beat with electric mixer on low speed till combined. Beat on Medium speed for 1 min. Spoon batter into pan starting on the outside and moving inward.

3.) Bake at 350 degrees for 30 to 35 min. when toothpick comes out clean it is done. Cool on wire rack for 5 min. loosen sides and put on plate. Serve warm.

Good One! My grandmother used to make pineapple upside-down cake; only she baked it in an iron skillet. The bottom (top) would get really crispy. Mmmmm. A little variation: i put a small can of crushed pineapple in the batter as well.

Guys i messed up when I was coping down the recipe. I use i 1tablespoon of juice in the bottom of the pan and 1 tablespoon or so in the batter. Sorry for the mistake.

I have baked 2 of these in 24 hours. and not been able to try one of them. lol but i will after lunch.

In an iron skillet is also how we used to make it.So delicious, so long ago.Now I only eat it when someone else makes it.When I lost my father I lost a great cooking teacher.
