This is a recipe I got from Foodtv.com and The Emeril Live Show. I have somewhat modified it a little to suite my taste.
Emeril’s Creole Seasoning
2 ½ tablespoons Paprika
2 tablespoons Salt ( I use 1 tablespoon)
2 tablespoons Garlic Powder
1 tablespoon Black Pepper
1 tablespoon Onion Powder
1 tablespoon Cayenne Pepper
1 tablespoon Dried Leaf Oregano
1 tablespoon Dried Thyme
Chop 1 cup each of:
Celery
Onion
Green Pepper
Mushrooms
Set aside
Boil approximately 4 – 6 cups of Chicken Broth.
In a skillet add Olive Oil (amount varies depending on how much Seasoning you use)
Season Chops with Seasoning ( I usually coat both sides generously) and place in hot skillet. Brown chops both sides (do not fully cook) Once you have flipped the Chops add chopped vegetables and more seasoning if you prefer. Pour in Chicken Broth enough to cover the chops. Place lid on skillet and cook for about 15 – 20 minutes or until Chops are done.
Mix enough corn starch and water so that you may thicken the sauce in the Chops, amount varies so make sure you have enough.
Stir in corn starch and thicken sauce to suit your taste.
Place chops on plate and top with the vegetables and sauce.
I serve with Bake Potato and Salad.
